Ingredients

1 Pork Butt
Bon Vivant! Sweet Chili Rub

Preparation

Poke pork butt all over with a fork. Generously rub pork butt with Bon Vivant Sweet Chili Rub. Wrap in a plastic bag and refrigerate overnight. Remove pork butt from bag and re-rub with more Sweet Chili Rub. Place on a rack in dutch oven or other oven pro vessel with a lid. Add approximately 1cm of water to pot and cover. Roast in oven at 250-270 degrees F for 8-10 hours. Check internal temperature and remove from oven when it reaches 180 degrees F. Allow the roast to rest for ½ hour to relax the meat and to retain moisture. The pork should be able to be pulled apart with a fork. Shred pork with a fork or pull apart using your hands. (The meat will be hot!)

Uses:

• Pulled Pork Sandwiches
• Fry julienne onion, diced peppers, and pork with Bon Vivant Citrus Barbecue sauce or your favourite flavour. Top with cheese and put on a grilled bun.
• Add to salads, either warm or cold.
